Looking for an easy, crowd pleasing, thirst quenching drink? This is it! It's not overly sweet and it goes great with anything you throw on the grill, or at a grad party. Make it ahead and pack it to go on the boat or take camping. It will keep in your fridge or cooler for a few days - if it lasts that long!
Ginger Peach Cocktail for a Crowd
Makes 10-12 servings
10 C boiling water
8 Cedar Lake Teas Ginger Peach tea bags
1/3 Cup Triple Sec
1/3 Cup Peach Schnapps
1/2 Cup simple syrup
1 Cup sugar
1 Cup of water
You are going to be steeping the tea bags twice so we will do this in two easy steps.
Step 1. Have 2 large pots ready. In the first pot, place the tea bags. In the second pot, heat 10 cups water until it is almost boiling, then remove from heat and let sit for 5 minutes (so it cools enough that you don’t burn the tea leaves). Add 5 cups of the heated water to the tea bags. Let steep for 6 minutes.
Step 2. Remove tea bags from first pot and place them in the remaining 5 cups of water to steep a second time for 6 minutes. When done steeping, remove tea bags and discard. Pour both brewed teas together into one pot. Add simple syrup* and alcohol, stir. Place in fridge to cool. (If serving right away, fill a cup with ice, pour drink over the top to quick cool. Add more ice if necessary.
When ready to serve, pour into a tall glass filled with ice.
*To make the simple syrup, boil one cup sugar with one cup water until dissolved.
This popcorn is light, earthy and sweet with a little kick of chili pepper. Take it on the go when outdoors or snuggle up to a bowl for movie night.
1/3 cup popcorn kernels
2 Tbl coconut oil
2 Tbl Cedar Lake Teas Belly Buster Tea (found at Fresh Thyme, co-ops or online
2 Tbl butter
sprinkle of chili powder
1 Tbl Fresh Thyme Salted Caramel Sauce
salt to taste
Preheat oven to 300.
In a small pot, place tea with butter and heat until butter melts.Remove from heat and let sit while popping popcorn. Strain leaves from butter. To the melted butter add the caramel, chili powder and salt. Stir to combine.
In a large pot with a lid, melt coconut oil on medium high heat. Add 3 popcorn kernels and cover. When kernels pop, remove from heat and add remaining 1/3 cup popcorn kernels. Put back on heat, tilt the lid so moisture can escape and pop until done, shaking frequently.
Remove pot from heat and add butter/caramel mixture.
Pour popcorn onto baking sheet lined with parchment paper. Bake in oven stirring frequently for 5-8 min. Watch so it doesn't burn. Remove from oven and pour in bowl. Sprinkle with more salt as desired.
