I've been asked to bring something to share at a family reunion. Of course tea comes to mind for obvious reasons, but usually the options for the kids are soda or a vat of sugary lemonade. Now if my kids are running around all day in the sun, I know sugary options are going to drag them down and they won't stay hydrated. So the best reason is to provide an option that's healthy, hydrating, and delicious. Plus people are always impressed with a lovely glass dispenser of iced tea - especially when it's as beautiful as this!
Here's the simple recipe.
Makes a 2 quart pitcher - serves 8 If you're making a double batch, save the tea bags, they are whole leaf and can be steeped a second time!
8 cups water
1/4 cup ginger, peeled and sliced
8 Cedar Lake Teas Organic Sweet Ginger Green tea bags
1/2 cup mint leaves, tightly packed, plus extra to serve
1/3 cup honey
1 lemon, cut in half
In a medium-sized pot, combine the water and ginger slices. Bring to a boil. Remove from heat and let sit for 5-7 minutes to cool. (If your water is too hot you will burn the tea and mint.) Add the tea bags and mint leaves. Cover the pot and steep for about 8-10 minutes.
Remove tea bags and mint with slotted spoon. Mix in the honey and juice from half of the lemon into the tea. Transfer to a pitcher and cool to room temperature before refrigerating.
Slice the second half of the lemon. If serving in a dispenser or pitcher, pour tea in and add a few lemon slices and a garnish of mint with the ice. Or if serving in glasses, pour tea into the glasses, add ice and garnish with a slice of lemon and mint.
* Helpful Hint - When I'm taking iced tea to a party, I always dump it in ice cream buckets and refrigerate until I'm ready to go. That way it stays cold and it prevents spilling, tipping or breaking the glass serving dispenser.
